Omega Packed Protein Bars
My son came home from school one day and asked if I can make him a protein bar that he can take to school. He wanted a snack mid-day but the store bought protein bars were just not cutting it for him. Many of them have fillers and random sweeteners or soy, which are things we try to avoid in our house. He’s a smart guy!
This is a no bake recipe that just needs a food processor and some fridge time. I send it to school wrapped in parchment in a bag with a tiny ice pack.
I try and get all my ingredients organic if possible, Nuts.com is a good resource for the dates and cocoa nibs.
15-18 Medjool dates, pitted
¼ c almond meal, (Trader Joes is great)
2 tbs. ground flax seeds
1 tbs. whole flax seeds
1/3 cup almond butter
1/3 cup peanut butter
1 tbs. cocoa nibs
1 1/4 tsp. vanilla
2 tsp. maple syrup
1 tsp. honey
1/8 tsp salt
1 tbs. protein powder
Chop dates in food processor. Add the remainder of ingredients and pulse until coarse. Push dough down if it sticks to sides and break up if it forms a ball.
Press mixture evenly into a jelly roll or 9x9” pan lined with parchment, until dough is about ¾” thick. Refrigerate for about 2 hours. Cut into 16 squares and wrap individually. Store in refrigerator.
